Couscous Fritters with Feta

Eating well is an important element of a healthy life, however if you are exercising a lot you may be tempted to grab something ‘on the go’ rather than spend time cooking. We aim to bring you recipes that are quick to cook and help promote a healthy lifestyle.  The recipe below makes that vegetarian horror, couscous, very tasty and it is quick to prepare.

 

Couscous fritters with feta

Serves 2: Prep 10 mins: Cook 10 mins:

 

175g/6oz couscous
200ml/7fl oz hot vegetable stock
1 egg beaten
2 tbsp natural yoghurt
85g/2oz sun-dried tomatoes (or use de-seeded fresh tomatoes and some tomato puree)
3 spring onions, finely chopped
2 tbsp sunflower or vegetable oil

 

1. Measure the couscous into a large bowl, pour over the hot stock, then cover with cling film. Leave to stand for 5 mins or until the couscous has absorbed the stock and is soft. Add the egg and yoghurt and mix well. Season then fold in the cheese, tomatoes and spring onions.

2. Divide the mixture into 4 and shape into patties. Heat the oil in a non-stick frying pan, then cook the fritters over a medium heat for 3 mins on each side until golden. Serve with a salad and some chutney.
